My life is full and busy. I teach elementary school full time. I coach high school debate and speech part time. I blog as often as I can. I have 4 busy teens and a husband that need attention and affection. I run my own home with as much efficiency and frugality as I can muster.
But sometime I am just pooped. Just too dang exhausted to do little more than get myself home from school.
Then I have to make dinner.
This is a recipe that I created when I just don’t have anymore energy. I am not going to preach about nutrition here…I’m sure we’ve all been tired to the point of just not caring. It is hot. It is yummy. It is filling. Let’s call it good shall we?
This is what you’ll need. I can’t say for sure how many burritos you’ll want to cook. It depends on the size of your family. I cook 16. 8 bean and cheese. 8 beef and bean. 2 different pans.
In a separate bowl, mix the tomato soup, cream of mushroom soup, and the enchilada seasoning. Pour or spread this mixture on the top of the frozen burritos. Bake at 350* for 30 minutes.
After 30 minutes, take the pans out of the oven and sprinkle the grated cheese over the top. Put the pans back in the oven for 10 minutes.
Take them out and serve them with anything or nothing at all. Remember, I’m too pooped to pop at this time.
My girls made a quick salad from a bag mix and sliced some apples. Dinner is saved…and served. The end.
Now…who can I talk into doing the dishes?
